That is how my Strawberry & Brie Tart with Herb Salad was born at America’s Test Kitchen. I still remember that moment all these years later and even took a photo-and oh, how I wish I was in Paris right now! I am a sponge every time I am in Paris and I soak up every bit of inspiration I can and carry that with me. Not only was it gorgeous, but the smell was intoxicating. When I first went to Paris years ago, I walked into La Grande Épicerie de Paris and saw the most glorious display of fresh strawberries nestled in with fresh herbs. These two ingredients were the perfect base for me to then think outside the box, or should I say, cake pan! For my creamy element, I turned to one of my favorite cheeses-Brie. This is a staple in my kitchen and even helped me win episode three when I made my Salt & Pepper Puff Pastry Croutons (Julia thought they were fabulous!). With such a short time to complete the challenge I immediately thought of using frozen puff pastry as my flakey element. My two textures were flakey and creamy-a match made in texture-heaven! My baking skills were put to the test in episode six of America’s Test Kitchen: The Next Generation! My fellow competitors and I had just 60 minutes to make a sweet or savory baked good that incorporated two textures that each of us had to choose randomly.
